Linda McCartney Sausages – A New Experience For Us

The inspiration for our Linda McCartney Vegetarian Sausages Recipe tribute stems from our first UK journey. Our travels in Wales took us to Raglan Castle, roughly 33 miles north of Cardiff City Center.  Our expectations for our morning’s explorations were greatly exceeded, and we spent many hours wandering the ruins of this ancient castle.  And we learned our footsteps traced those not only of the former castle residents but also of Led Zeppelin and actors from Time Bandits, both of which filmed on location at Raglan Castle.

Following our visit to the castle, we were hungry. Walking down the hillside and across the A40, we wandered upon The Ship Inn and decided this looked like just the place to enjoy lunch. And this is where we would try our first Linda McCartney sausages for the first time.

The Ship Inn – Raglan Wales

The Ship Inn offers diners a unique and wonderful experience. Guests are made to feel welcome when they enter, with friendly staff offering a warm greeting. The food features classic pub favorites, steaks, and comfort food, all perfectly cooked. It’s a friendly place that values quality over quantity. We loved their welcoming atmosphere and found it a perfect spot to enjoy a meal after exploring nearby Raglan Castle.

Inside, the Ship Inn was quaint and reminded us of stepping into an English family home.  There wasn’t much of a crowd during our later-than-usual lunch. A few people were enjoying drinks. We were seated at a table with comfortable chairs and started our lunch with tea.  Looking at the menu, we selected a dish that included Linda McCartney’s Vegetarian Sausages with peas and mash.  

Over the years, we’ve enjoyed the music made by the McCartneys. And on this occasion, we found a new reason to appreciate another inspiration from the McCartney household.

Recreating recipes from our travels

Returning home from our UK trip, we attempted to recreate many foods we enjoyed.  One of these was to create a vegetarian sausage as an homage to the Linda McCartney vegetarian sausages we enjoyed in Wales and England. 

Linda McCartney Vegetarian Sausage Recipe

The recipe below for Linda McCartney Vegetarian Sausages is our homage to this part of our Raglan lunch, at least in spirit.  We didn’t set out to recreate a near-exact imitation of the sausages we ate in Raglan. Instead, this recipe provides an easy way to make vegetarian sausages with a nod to the variety that bears Linda McCartney’s name. 

Ingredients in the original Linda McCartney Sausages

We looked up the ingredients used in Linda McCartney sausages.  These include:

Rehydrated Textured Soya Protein (52%), Water, Rapeseed Oil, Soya Protein Concentrate, Seasoning (Sulphites) (Dextrose, Flavourings, Salt, Onion Powder, Yeast Extract, Colour: Red Iron Oxide), Fortified Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin), Bamboo Fibre, Stabiliser: Methyl Cellulose, Tomato Purée, Salt, Raising Agent: Ammonium Carbonates

We chose an alternate route for our version, with more natural ingredients than one made for shipping to stores and more extended-term storage.

Homage to Linda McCartney Vegetarian Sausages Recipe

Ingredients

½ tablespoon olive oil
½ onion, chopped
2 cloves garlic, chopped
½ teaspoon dill or fennel seeds
½ teaspoon cumin seeds
½ teaspoon caraway seeds
½ teaspoon thyme
1 teaspoon paprika or cayenne pepper
1/8 teaspoon salt
¼ cup canned garbanzo beans
1 tablespoon tomato paste
1 tablespoon soy sauce
¼ cup sparkling water
¾ cup vital wheat gluten

Directions

Heat olive oil in a large skillet.  Sautée the onion and garlic cloves until translucent, 3 to 5 minutes.  Add the seeds and cook one more minute.

In a food processor, add garbanzo beans, transfer the onion-garlic-seeds mixture, spices (thyme, paprika, salt), tomato paste, soy sauce, and sparkling water.  Blend well until smooth.  Add the vital wheat gluten and continue to blend until the mixture forms a ball shape.

Fill a large pot (dutch oven) with water just under the level of a steaming basket and bring to a boil. 

Divide the blended mixture into quarters.  Roll each piece into a sausage shape.  Roll each vegetarian sausage in parchment paper and then in aluminum foil.  Twist the ends of the foil well.  Place the wrapped sausages on top of the steaming basket and steam for 40 minutes, turning over once after 20 minutes.

Serving Recommendation

We recommend serving with cooked peas (fresh is best) and mashed potatoes with gravy.

Health Benefits of Vegetarian Sausages

A plant-based veggie sausage typically provides less fat than a traditional meat sausage.  However, it is often the case that plant-based links purchased in supermarkets can have as much salt as processed meat.  So making your own allows you to control sodium levels to your preference.

      1. Thanks for stopping by. The sausages we created were more of an attempt to try to keep in the “spirt” of the Linda McCartney sausages that we ate in Wales and England. So not an attempt to recreate the exact same thing. That, we weren’t able to quite replicate, but these still were an enjoyable vegetarian version for us. We do have another recipe posted on the blog, if you search for “Dunster Dogs” that I think landed somewhat closer to the Linda McCartney sausages. In any event, we had fun trying our hand at a couple of versions of a somewhat similar creation. Cheers!
