Dunster Dogs

We enjoyed experiencing an English country fair while visiting Dunster in Somerset. And you can’t go to a fair without enjoying food treats that are offered by the variety of vendors. For lunch, we had vegetarian sizzling sausages. This Dunster Dogs recipe is inspired by our lunch at the Dunster Country Fair.

Sizzling Sausage Dog, Dunster Country Fair

INGREDIENTS

  • 120 g lentils, cooked
  • ½ tablespoon oil
  • ½ onion, chopped finely
  • 1 banana pepper, chopped finely
  • 1 garlic clove, minced
  • 1 mushroom, chopped finely
  • ½ teaspoon thyme
  • ½ tablespoon oregano
  • 83 grams walnuts, ground finely
  • 83 grams breadcrumbs
  • ½ tablespoon tomato sauce
  • ½ teaspoon Worcester sauce
  • ½ teaspoon celery salt
  • 1 egg whisked
  • Parchment paper

DIRECTIONS

  1. Cook the lentils for 25 minutes until they are soft.  Set aside.
  2. Saute the onions.  Add the banana pepper and garlic and chopped mushrooms cooking for about 5 minutes. A  Remove from heat
  3. In a large bowl, add the cooked onion mixture along with the remaining ingredients.  Mix well.
  4. Using a ¼ cup measure, take out portions of the combined mixture and shape into individual sausages.
  5. Wrap each shaped sausage in parchment paper, tucking the ends to hold the pieces together.  Alternatively, consider adding an extra layer of aluminum foil and twist the ends to hold the vegetarian sausage in place.
  6. Place the sausages in a steamer for 20 minutes.  Then remove to allow them to cool.
  7. Prior to serving, fry on a pan for an additional few minutes, taking care not to break the sausages.

SERVING RECOMMENDATION

Serve with a side salad and chips. We made a zucchini salad as this vegetable is growing faster than we can eat in our garden. Also, to complement this meal, a recipe for English Oven Potato Chips was previously posted on our blog:
